Baked Stuffed Tomatoes – Some people love Baked Stuff Tomatoes. Others not so much. Why not try this recipe to see if they change their mind. These vegetables are rich in potassium and have four important carotenoids (nutrients – synergy) such as alpha- and beta-carotene, lutein, and lycopene.
- 4 medium size tomatoes
- 1/2 lb. ground beef
- 1/4 c. finely chopped onion
- 1/4 c. finely chopped celery
- 2 Tbsp. butter
- 1 1/4 c. water
- 1/2 c. Post Grape-Nuts cereal
- 1 tsp. salt
- 1/4 c. grated Parmesan Cheese
Scoop out tomatoes, reserving pulp. Brown meat in skillet; remove and set aside. Saute onion and celery in butter until tender. Add pulp and 1 cup water. Bring to boil; simmer 5- 8 minutes, or until pulp is tender.
In bowl, combine meat, cereal, salt, remaining 1/4 cup water and 1/2 cup of sauce. Place tomatoes in shallow baking dish and fill them with meat mixture. Pour remaining sauce over tomatoes; sprinkle with cheese.
Bake at 375 degrees for 15 – 20 minutes, or until tomatoes are tender.
