Salad Recipes Apricot Congealed Salad

Yummy!  Apricot Congealed Salad recipe that will get you asking for more!   


  • 2 1/2 can apricots
  • 2 can crushed pineapple
  • 2 small pkgs jello (orange)
  • 1 c. miniature marshmellows
  • 3 Tbsp. flour
  • 1 c. pineapple juice
  • 1 egg
  • 1/2 c. sugar
  • 4 1/2 oz. whipped topping 

Drain juice from apricots and crushed pineapple, but do not mix.  Bring two cups apricot juice (add water, if necessary) to a boil and dissolve jello in it.  Chill until almost congealed.  Mash or dice apricots and add to crushed pineapple along with marshmallows.  Add fruit to jello and pour into 9 x 12 inch dish.  Congeal.  

Custard Topping 

Mix together:

  • 3 Tbsp. flour
  • 1/2 sugar

Add slowly:

  • 1 c. pineapple juice
  • 1 beaten egg 

Mix and cook over low heat until it thickens.  Remove from heat and add 2 teaspoons butter (if you wish).  Let cool.   Add thawed whipped topping (1/2 large container) and fold into custard.  Spread over top of jello and let set.  Cut in squares and serve on lettuce.
